Mesh between gore
Upon measuring my Etta today, I noticed it has a small piece of mesh at the gore. I'm curious--does this have a structural purpose? Does it stabilize the cups or something?

Yes this is for stabilisation.
Each fabric is woven and if you cut it to sew something you have to notice that it has the right direction. Otherwise it would not last long. I will upload a pic of my charnos carmen where there is even a better solution to make the construction stable.
Oh! Now I need to inspect my bras closer but I do not recall seeing that yet. Interesting!
